HERBS (Culinary and Medicinal)
The
best cooks know, there's no substitute for freshly picked herbs. Not only
do they add a delightful tang and aroma to your food, they make an excellent
way to reduce salt in your diet. Try adding fresh herbs, and you might
discover you don't need the salt shaker on the table anymore. And when
you do need dried herbs, get them from a local farm or dry them yourself.

Some local farmers are turning to the production of these plants as herbal medicines become more popular, yet wild collecting endangers some of our most popular herbs.
